How can I undo and redo changes in Vim or Vi?

I’m having trouble with undoing and redoing changes in Vim/Vi. I know you can use u for undo and Ctrl-R for redo, but sometimes it seems like it doesn’t work, or it undoes too much, and I can’t get back to where I was. Is there a way to undo just one step at a time without messing up the entire session? Also, are there any limitations to the undo/redo feature in Vim that I might be overlooking? Any help would be appreciated!

To undo a change in Vim or Vi, just press the u key while in normal mode to redo the change, also press Ctrl + R in normal mode.
